This is the 4th of July mashup of my dreams, a blueberry cobbler and strawberry shortcake baked as one, in perfect harmony because I want them both for the holiday. The flaky biscuit is my muse and at the heart of this admittedly made-up dessert. It all begins with a Big Batch of Buttery, Buttermilk Biscuits (say that 10 times fast) made with a 1/2 pound of Kerrygold butter* layered in. I add fresh thyme because it is all over my garden and planted right next to the strawberries (I’ve successfully grown ONE strawberry so far, the rest have been rabbit food), so they seem destined to be together. The combination is sensational and summery!

This mashup is the best of two biscuit worlds, the cobbler and the shortcake. Both involve flaky tender biscuits and fruit, so why not put them together in one pan?
