Only in the hands of my friend, Christina Nguyen, does a sweet potato side dish steal the show, literally. The main event for an episode of Zoë Bakes was meant to be the Baked Alaska, with its multiple layers of colorful ice cream and sorbet, covered in spikes of meringue. My Baked Alaska was great (recipe below), don’t get me wrong, but it was Christina’s crispy sweet potatoes with lime leaf tofu sauce that we were all talking about months later.
Christina hits it out of the park every single time, regardless of the dish. That’s why she continues to be celebrated as one of the best chefs in Minneapolis and has been recognized nationally by the James Beard Foundation for many years running. Her food isn’t fussy or fancy, just filled with flavor and absolutely delicious. I’m so grateful to call Christina a friend and thankful she is sharing this outstanding recipe with my “Extras” subscribers. Baked Alaska with Raspberry Sorbet Lime Ice Cream
In this episode I also got to visit Sameh Wadi at his ice cream shop, Milkjam Creamery, to experiment with outside-of-the-box ice cream flavors. Our time together inspired the flavors in this Baked Alaska that I served as dessert for our dinner.
