As a thank you to my Extras subscribers, here is an exclusive recipe for Charlotte Royale with matcha genoise, just in time for Passover & Easter.
The colors and patterns of this cake were inspired by a crocheted dress. It may seem odd, but I see cake just about everywhere, even a 1970s patchwork dress. I was watching Daisy Jones and the Six, the fictional story inspired by Fleetwood Mac, and the clothes jumped out at me. I grew up in that era and remember my mom wearing clothes just like it. She sewed, knit and probably crocheted outfits for us both. As I was watching the show, I was also planning a class I’d be teaching in Birmingham, AL at the Bake From Scratch magazine kitchens. A Charlotte Royale from my book, Zoë Bakes Cakes, was on the agenda and it struck me that the cake looked just like a crocheted dress. A rabbit hole search on the internet sent me straight to Marco Rambaldi’s dress. His dress was my muse.
Here is a link to the Charlotte Royale made with just one color, which is a simpler, more traditional, place to start with this cake.
