Exclusive Recipes: Mug Muffins

When it gets this hot and sticky, you may want to give your oven a break but still want fresh muffins in the morning. These mug muffins take just ONE minute to bake in the microwave so you can grab and go on a busy morning. Inspired by my delicious chocolate microwave mug cake, which is crazy popular on my website, because it’s so easy, super-fast, and requires no hot oven.

Raspberry Mug Muffin

I wanted to use the same concept to recreate a tiny batch (makes 2) of microwave muffins for the morning. Well, I had so much fun, that I ended up with THREE flavors: chocolate-banana (which can double as dessert) and classic blueberry or raspberry muffins! In the heat of the summer, when you want a sweet treat or a quick breakfast that’s made from scratch but doesn’t take long at all, try these mug muffins. Each recipe makes two mugs. You can enjoy one and save the other in the refrigerator for later. Just pop them in the microwave when you are in the mood for fresh muffins.
