Wow, thank you for the incredible pie questions. I am reading through them and it is super inspiring. I will get to work creating recipes and techniques that make your pie baking more successful and most importantly, fun!

The Passion Fruit Bars

Take a classic lemon bar and make it with passion (fruit), plus a curly high top of meringue and you’ve got a winning combination for a bake sale or an over-the-top afternoon treat. Back in March my friends and I had an MN Bars Bake Sale to raise funds for The Salt Cure Fund, the organization created by my friend and travel companion, Stephanie March, to deliver financial aid to our local restaurant community, which was devastated when ICE swept through Minnesota.

I love a lemon bar, but wanted to make something just a little bit EXTRA for the sale. I made these fun Passion Fruit Meringue Bars and they sold out instantly. I’m finally getting around to sharing the recipe with you.

The crust is essentially a cookie dough baked crisp, with a little caramelization (for color, flavor and texture). The no-bake passion fruit curd is made on the stovetop and has a touch of gelatin, which acts as insurance that it will set firm and stay that way! The topping can go two ways; a quick dusting of confectioners’ sugar or a flouncy peak of toasted meringue. If you know anything about me, you know I always go with the meringue.
