Peach Melba Bombe Glacée (don’t let the fancy name fool you, it’s super simple to make)

A Bombe Glacée (ice cream bomb) is just an ice cream (or sorbet) packed round dessert, covered in whipped cream or chocolate or sprinkles (think dot-cake bombe) or meringue (aka Baked Alaska). You have endless choices for flavors. I went with Peach Melba sorbet, which is peach and raspberry sorbets swirled together into this pink and orange splendor. This flavor combination is a classic, developed by the first celebrity chef, Auguste Escoffier, in 1892 for an Australian opera singer, Nellie Melba.

For the topping I piped whipped cream to create what looks like an Esther Williams swim cap, which is a little fancy and also helps to insulate the frozen sorbet within. A thin layer of cake on the bottom is used to keep the sorbet from melting onto the plate and it’s another layer of deliciousness.

Who is Esther Williams? When I was a kid in the 1970s, I was obsessed with the glamorous old movies from the 40s and 50s. Esther Williams was the “Million Dollar Mermaid” and appeared in high production water ballet films that were over the top and seemed like magic. I just loved watching her dive and dance in the pool in her bedazzled outfits. She is my Bombe muse.
