I think it’s time for bright, sunny spring, so I’ve got citrus on the mind. Here are some lovely options for upcoming spring celebrations.
Lemon Poppy Seed Roulade: This is a beautiful lemon sponge cake made with Matzo Cake Meal, topped with Poppy Seed Buttercream, rolled into a spiral, and topped with a Limecello Poppy Seed Glaze. It is delicious and a cake worthy of your Passover table.
Lemon & Blood Orange Bars: I shared these bright bars in late January and they’d be perfect on your Easter table for a bright pop of color and flavor.
This yellow layer cake is filled with lemon curd and strawberry buttercream, then coated with vanilla buttercream on the outside and topped with fresh berries. This newsletter was a tutorial on making your own layer cake! It’s perfect for birthdays, baby showers, and many more celebrations.

Minnesota has been on my mind lately. How are you doing these days?
Carrot cake!!!! This is very timely. Last night I peeled all the carrots in my crisper from my CSA last season. I love the idea in your post about baking the cakes and then freezing them. Some of the Carr I put in a stew I’m making this morning. The carrots were too hairy to make the candied peal but once I peeled them they will make a beautiful cake!! I’ll use dried door co cherries and WI dried cranberries yum. Thank you so much for sharing all of these wonderful recipes
