I baked this cake yesterday. So tender and perfect crumb!! I bought the celebration pan and the batter rose up on the top. Did you use any sort of weight to achieve your flat top without the rounding that bundt cakes typically get? I trimmed it flat, although it ended up being a shorter cake. So beautiful though.

I also used The Cake Bible for guidance as a young pastry chef! My career lasted 30 yrs and there’s was never a time the Cake Bible wasn’t in the bakery kitchen. The pages eventually smelled a bit rancid form all of the butter and flour that were on the pages . A lot of us have Rose to thank for being our teacher…
